Instructions

  1. Shred cheddar cheese (3 cups).
  2. Measure salt (1 teaspoon) and black pepper (1/2 teaspoon).
  3. Heat a large skillet over medium-high heat. Add ground beef (1.5 lbs) and cook until browned, breaking it into small pieces with a spatula.
  4. Season the beef with salt (1 teaspoon) and black pepper (1/2 teaspoon). Drain excess fat and set aside.
  5. Heat a clean skillet over medium heat and add 1/2 tablespoon of vegetable oil or butter.
  6. Place one tortilla in the skillet. Sprinkle 1/2 cup shredded cheddar cheese evenly over the tortilla.
  7. Add 1/4 lb of the cooked ground beef on top of the cheese.
  8. Top with another tortilla and press down gently with a spatula.
  9. Cook for 2-3 minutes or until the bottom tortilla is golden brown and the cheese starts to melt.
  10. Carefully flip the quesadilla and cook for an additional 2-3 minutes on the other side until golden brown and the cheese is fully melted.
  11. Remove from the skillet and let it cool for a minute before cutting into wedges.
  12. Repeat the process with the remaining ingredients to make 5 more quesadillas.
  13. Serve hot with your favorite toppings, such as salsa, sour cream, or guacamole.
