Instructions

  1. Zest and juice the lemon (1 large).
  2. Mince garlic (3 cloves).
  3. Chop fresh oregano (2 tablespoons) and fresh thyme (1 tablespoon).
  4. Cut chicken breast (1.5 lbs) into 1-inch cubes.
  5. Slice zucchini (2 medium) and cut bell peppers (2) and red onion (1 large) into chunks.
  6. In a large bowl, combine lemon zest, lemon juice, minced garlic (3 cloves), chopped oregano (2 tablespoons), chopped thyme (1 tablespoon), olive oil (1/4 cup), salt, and pepper to taste.
  7. Add chicken cubes (1.5 lbs) to the marinade, tossing to coat. Cover and refrigerate for at least 30 minutes.
  8. Preheat grill to medium-high heat (about 375°F).
  9. Thread marinated chicken, zucchini slices (2 medium), bell pepper chunks (2), and red onion chunks (1 large) onto skewers.
  10. Grill skewers for 8-10 minutes, turning occasionally, until chicken is cooked through (internal temperature of 165°F) and vegetables are tender.
  11. Serve immediately.
