Instructions
- Zest and juice the lemon (1 large).
- Mince garlic (3 cloves).
- Chop fresh oregano (2 tablespoons) and fresh thyme (1 tablespoon).
- Cut chicken breast (1.5 lbs) into 1-inch cubes.
- Slice zucchini (2 medium) and cut bell peppers (2) and red onion (1 large) into chunks.
- In a large bowl, combine lemon zest, lemon juice, minced garlic (3 cloves), chopped oregano (2 tablespoons), chopped thyme (1 tablespoon), olive oil (1/4 cup), salt, and pepper to taste.
- Add chicken cubes (1.5 lbs) to the marinade, tossing to coat. Cover and refrigerate for at least 30 minutes.
- Preheat grill to medium-high heat (about 375°F).
- Thread marinated chicken, zucchini slices (2 medium), bell pepper chunks (2), and red onion chunks (1 large) onto skewers.
- Grill skewers for 8-10 minutes, turning occasionally, until chicken is cooked through (internal temperature of 165°F) and vegetables are tender.
- Serve immediately.
