- 2 tablespoons olive oil (for salmon)

Grilled Salmon with Mediterranean Quinoa Salad

Instructions
- Rinse quinoa (1 cup) under cold water and cook according to package instructions. Set aside to cool slightly.
- Dice cucumber (1 medium) and halve cherry tomatoes (1 cup).
- Finely dice red onion (1/4 cup) and slice kalamata olives (1/4 cup).
- Chop fresh parsley (1/4 cup).
- Zest and juice the lemon (1).
- Crumble feta cheese (1/2 cup).
- Preheat grill or grill pan to medium-high heat.
- Brush salmon fillets (4 fillets, 6 oz each) with olive oil (2 tablespoons) and season with salt and pepper to taste.
- Grill salmon for 4-5 minutes per side, or until cooked through and flaky.
- In a large bowl, combine cooked quinoa, diced cucumber (1 medium), halved cherry tomatoes (1 cup), diced red onion (1/4 cup), sliced kalamata olives (1/4 cup), crumbled feta cheese (1/2 cup), and chopped parsley (1/4 cup).
- Drizzle with olive oil (1/4 cup) and lemon juice (from 1 lemon). Add lemon zest and toss to combine. Season with salt and pepper to taste.
- Serve grilled salmon alongside the quinoa salad. Garnish with additional lemon wedges if desired.
