Instructions

  1. Rinse quinoa (1 cup) under cold water and cook according to package instructions. Set aside to cool slightly.
  2. Dice cucumber (1 medium) and halve cherry tomatoes (1 cup).
  3. Finely dice red onion (1/4 cup) and slice kalamata olives (1/4 cup).
  4. Chop fresh parsley (1/4 cup).
  5. Zest and juice the lemon (1).
  6. Crumble feta cheese (1/2 cup).
  7. Preheat grill or grill pan to medium-high heat.
  8. Brush salmon fillets (4 fillets, 6 oz each) with olive oil (2 tablespoons) and season with salt and pepper to taste.
  9. Grill salmon for 4-5 minutes per side, or until cooked through and flaky.
  10. In a large bowl, combine cooked quinoa, diced cucumber (1 medium), halved cherry tomatoes (1 cup), diced red onion (1/4 cup), sliced kalamata olives (1/4 cup), crumbled feta cheese (1/2 cup), and chopped parsley (1/4 cup).
  11. Drizzle with olive oil (1/4 cup) and lemon juice (from 1 lemon). Add lemon zest and toss to combine. Season with salt and pepper to taste.
  12. Serve grilled salmon alongside the quinoa salad. Garnish with additional lemon wedges if desired.
