Instructions

  1. Slice chicken breast (2 lbs) into thin strips.
  2. Slice bell peppers (3) and onion (1 large).
  3. Juice one lime (reserve the other for garnish).
  4. Chop avocados (3) into slices or cubes.
  5. Wash and dry lettuce leaves (12).
  6. In a bowl, season chicken strips (2 lbs) with cumin (2 tsp), chili powder (2 tsp), salt, and lime juice (from 1 lime). Toss to coat evenly.
  7. Heat a large skillet over medium-high heat. Add chicken and cook for 6-8 minutes, stirring occasionally, until fully cooked. Remove from skillet and set aside.
  8. In the same skillet, add sliced bell peppers (3) and onion (1 large). Sauté for 5 minutes until tender.
  9. Return chicken to the skillet and stir to combine with peppers and onions. Cook for 1-2 more minutes to heat through.
  10. Serve the chicken fajita mixture with lettuce leaves (12), avocado (3), sour cream (1 cup), and lime wedges (from remaining lime).
