- 2 cups cherry tomatoes, halved
- Juice of 1 lemon (about 3 tablespoons)
- 1/4 cup olive oil

Middle Eastern Kofta with Cucumber Tomato Salad
Spiced ground chicken kofta kebabs served with a refreshing cucumber and tomato salad.

Instructions
- Chop parsley (3/4 cup total: 1/2 cup for kofta, 1/4 cup for salad).
- Finely dice onion (1 cup) and mince garlic (4 cloves).
- Dice cucumbers (2 cups) and halve cherry tomatoes (2 cups).
- Juice lemon (3 tablespoons).
- In a large bowl, combine ground chicken (2 lbs), 1/2 cup chopped parsley, cumin (2 teaspoons), paprika (2 teaspoons), diced onion (1 cup), minced garlic (4 cloves), salt, and pepper to taste. Mix until well combined.
- Shape the mixture into 12 equal-sized kebabs (about 3 inches long).
- Preheat grill or grill pan to medium-high heat. Lightly oil the grates.
- Grill the kofta kebabs for 4-5 minutes per side, or until the internal temperature reaches 165°F.
- Remove from grill and let rest for 3 minutes.
- In a separate bowl, combine diced cucumbers (2 cups), halved cherry tomatoes (2 cups), remaining 1/4 cup chopped parsley, lemon juice (3 tablespoons), olive oil (1/4 cup), salt, and pepper to taste. Toss gently to combine.
- Serve the kofta kebabs warm with the cucumber tomato salad.
