Middle Eastern Kofta with Cucumber Tomato Salad

Spiced ground chicken kofta kebabs served with a refreshing cucumber and tomato salad.

Instructions

  1. Chop parsley (3/4 cup total: 1/2 cup for kofta, 1/4 cup for salad).
  2. Finely dice onion (1 cup) and mince garlic (4 cloves).
  3. Dice cucumbers (2 cups) and halve cherry tomatoes (2 cups).
  4. Juice lemon (3 tablespoons).
  5. In a large bowl, combine ground chicken (2 lbs), 1/2 cup chopped parsley, cumin (2 teaspoons), paprika (2 teaspoons), diced onion (1 cup), minced garlic (4 cloves), salt, and pepper to taste. Mix until well combined.
  6. Shape the mixture into 12 equal-sized kebabs (about 3 inches long).
  7. Preheat grill or grill pan to medium-high heat. Lightly oil the grates.
  8. Grill the kofta kebabs for 4-5 minutes per side, or until the internal temperature reaches 165°F.
  9. Remove from grill and let rest for 3 minutes.
  10. In a separate bowl, combine diced cucumbers (2 cups), halved cherry tomatoes (2 cups), remaining 1/4 cup chopped parsley, lemon juice (3 tablespoons), olive oil (1/4 cup), salt, and pepper to taste. Toss gently to combine.
  11. Serve the kofta kebabs warm with the cucumber tomato salad.
